Chewy Tortillas
4 cups all purpose flour
2 cups lukewarm milk
2 tsp preferred Cranky Jimmy's Seasoning (we use Original or Medium)
1 tbsp baking powder
1/4 cup olive oil
Put milk in bowl and let warm on stove on low, or just to room temperature - just not cold. Add the Original (or preferred Cranky Jimmy's Seasoning) and stir (we also add extra fresh minced garlic, basil and parsley and replace 1 cup white flour with whole wheat but we wanted a clean looking tortilla for this photo. We have also added minced sundried tomatoes and jalapenos - VERY GOOD!!).
Add oil to milk and mix.
In a mixing bowl, add flour and baking powder. Turn on mixer with dough hook. Slowly add the milk mixture and knead until done. Divide into 16 equal portions and roll into balls. Flatten the ball and roll out until 1/8" thick, lifting and turning as you roll. Place into a HOT, DRY pan (we use cast iron, no butter, and just past medium heat). Cook each side for 1 - 2 mins or until done to desired browness - do not overcook.
Makes a great snack on it's own, or a wrap. Very versatile and easily adaptable. Try it with different flours, bran, fruit etc. They freeze beautifully, however, you MUST cool them, and make sure there is no sweat between them or they will freeze into a giant solid block - trust me.
