
Bannock Fries
8 cups flour
1 cup of sugar
4 tbsp baking powder
2 tsp salt
2 tsp Cranky Jimmy's Original
2 cups milk
3 cups water

Mix dry ingredients thoroughly and make a well in the center of the flour mixture. Slowly pour the liquid into the center and fold the liquid into the flour until all mixed thoroughly.

​This will make a super sticky ball of dough. For us, being only 2 people, we halved the recipe and in order to roll it out, we used less liquid and more flour. It was a little sweet for us, so next time we would add a little less sugar, but that's just us. The point is, this is a great, adaptable recipe.

Heat a pan (cast iron is best) on medium heat, once hot, pour a very generous amount of oil to coat pan. Pull off a small amount dough, maybe the size of a peach, roll it out to about 1/4 inch thick (6 mm) on a floured surface and place in pan. Cook for one or two minutes, flip like a pancake and cook other side. Once both sides are dry and cooked, place on counter to cool. Once cool, cut into strips that are as wide as the bannock is thick. So if, 1/4 inch thick then cut 1/4 wide. If 1/2 inch thick then cut 1/2 wide. Place the cut side (the uncooked side) down on the pan and fry for 1 or 2 minutes. Flip to other side and cook that side. If you find the top or bottom could use a little more frying to crisp it up, then now is the time.
