Chicken Parm

2 chicken breasts, cut in half (parallel to cutting board)

2 cups marinara sauce​

1 egg, beaten

1/2 cup Cranky Jimmy's Coating Mix

1/4 cup grated Parmesan cheese (divided)

1 tsp dried basil

1 cup grated mozza cheese

Preheat oven to 350F

​

Place each chicken breast on cutting board and cut in half, parallel to cutting board - you should have one flat, larger piece and one less flat, smaller piece. 

Place 1/2 cup Cranky Jimmy's Coating Mix in a bowl. Or more, we're not the Breadcrumb Police. You do you. Place chicken in the Coating Mix and cover, making sure all sides are covered. This will just basically be flour and seasonings, the breadcrumbs will not stick - yet. Do this for all pieces of chicken, set aside.

Once all the chicken has had the first coat, add half of the grated Parmesan cheese and the dried basil to the coating mix and mix well.

Take the first-coated chicken and dredge in the egg, making sure to cover all sides. Place in the enhanced Coating Mix, making sure to cover all sides. Set aside and repeat for all the pieces of chicken. Once all the chicken has had a second coat (now the breadcrumbs will be on there), refrigerate until needed, or jump right into it if everything is ready.

*This step is optional. You can skip this part and put straight into the oven and it will be amazing, or you can do this part and it will be more amazinger. Heat a medium sized pan on medium heat. Once hot, melt a large pat of butter and before the butter burns, place the chicken in the hot pan. Brown each side until nice and golden brown. You're not cooking it, just browning the outside.

Place chicken into baking dish (I like to put a little olive oil or butter in the bottom so it doesn't stick). Put the marinara sauce on the chicken, you don't need to cover every inch. The parts that are not covered will be crispier. Take the remaining grated Parmesan cheese and dust the chicken. Some of the cheese should fall on the marinara and some of the breadcrumbs. It's all good. Cover the baking dish with tin foil and bake for 20 minutes. Remove foil and bake for a further 15-20 minutes or until done. Once fully cooked top with the grated mozza cheese and broil on low. Once the cheese is nice and crispy, remove and serve with desired side.
